so, last week was such a relative failure (though! still only 1 bought breakfast!) that i had to go back to a more traditional breakfast, and i decided that i should plan to buy something so that i could be really excited about it!
i saw that veggie ham was on sale at stop and shop while i was doing our house grocery run. and i love veggie ham. it’s a strange love, but i am so into it.
from there, i knew: strata! i found english muffins on sale buy one get one free–we have bread at home, but i wanted larger chunks than i could get from thin slices–and i figured everything else i needed could come from the house stock.
the nice thing about strata is that it is super tasty. the second nice thing about it is that it is super easy. the third nice thing is that it can have anything you want in it!
this strata is a little untraditional due to the amount of veggies in it (specifically: so many veggies!). but it is super delicious!
after preheating the oven to approx 375, i whipped 4 eggs, a cup and a half of soymilk, and some fake paula deen seasoning mix (i.e., equal parts garlic powder, onion powder, kosher salt, and black pepper).
i then roughly chopped 5 ww english muffins. i poured the egg mixture on them, and added a little lemon juice. then i tossed it all together so that everything was all coated.
i added a variety of frozen veggies. namely: spinach, broccoli, edamame, and corn. i used about 3 cups of veggies total. then, i chopped up a lot of parsley and chives and added them, too. we had the end of a block of jack cheese and so i chopped it, as well as the veggie ham, into little squares. i mixed it all together, and added about an ounce of little tiny pieces of cream cheese. i put it into a greased pan, and then put it into the oven!
after 30 minutes, i took it out–and, voila! deliciousness!
- breakfasts made: 6–and i ate one on sunday as a snack!
- time spent: ~50 minutes.
- total cost: $3.58–$2.49 for the veggie ham, and $1.09 for the muffins!
- ultimate plan: back on track!

Maybe making the same thing with some pasta instead of bread sometime, would be another good experiment in pushing the bounds of breakfasty-ness? More data!
